Pennette Rigate with courgettes, aubergines and cherry tomatoes
350g Barilla Integrale Pennette Rigate
200g courgettes
150g aubergines
100g cherry tomatoes
4 tablespoon extra virgin olive oil
1 clove garlic
Salt and pepper
Fresh parsley
Peel the aubergines and cut julienne-style with the courgettes. Soften the cherry tomatoes in a frying pan with a little oil and pinch of salt. Using another frying pan, heat the oil with a garlic clove, then add the aubergines and courgettes. Cook for 3 minutes, add the cherry tomatoes, and salt and pepper to taste. Cook the Barilla Integrale Pennette Rigate in plenty of salted water, drain when "al dente" and add them to the vegetables, garnishing with fresh chopped parsley.
